Ceylon Arrack, Old Coconuts, Pineapple Skins, Sri Lankan Spices
Pineapple Arrack uses Ceylon Arrack, a spirit from Sri Lanka that is distilled from the coconut flower sap. We add some coconuts along with Sri Lankan spices in the infusion such as Ceylon Cinnamon, Cardamom, Black Pepper, Cloves and Pineapple skins which still retain much flavour. The infusion goes in a sous vide for 2 hours before being strained overnight.
